From Cordoba to the world, flamenquín is a typically Spanish dish that has crossed borders due to its simplicity and taste. Loved in equal parts by young and old alike, the traditional recipe includes pieces of Serrano ham and pork loin ribbons rolled up and dipped in breadcrumbs.

Although there are numerous varieties. For example, you can substitute the loin for ham or incorporate other fillings, such as cheese, peppers, ... Or, why not? Chorizo riojano.

Ingredients
 ½ riojan chorizo sausage
 8 slices of York ham
 8 slices of gouda cheese
 Olive oil for frying
For the breading
 Flour
 Egg
 Bread crumbs

Cut the chorizo into very thin slices on the bias.

Place a slice of ham on top of another slice of cheese and add the slices of chorizo.

Roll up tightly so that the cheese does not protrude.

Dredge in flour, egg and bread crumbs, fry in hot oil.

Drain on paper towels and serve.
