La Rioja is world famous for its wines but, along with one of the most internationally recognized Denominations of Origin, the region also has an important gastronomic legacy that continues to be passed down from generation to generation. The first step in the production of the best Spanish chorizo is to select the raw materials: meat and bacon. The latter should be consistent and the total amount should not exceed 57% of the dry substance.

Then, the meat and bacon are chopped and minced, seasoned with fine dry salt, 100% extra category paprika and fresh and peeled natural garlic. It is mixed and kneaded under vacuum, and the paste is left to pre-ripen before being vacuum stuffed into natural pork casings. Finally, it is tied and punctured, matured, dried, labeled and packaged.

During the maturation of our Riojan chorizo, the sapid and aromatic characteristics of this type of chorizo evolve, which determine the traditional quality of Riojan chorizo, as well as its characteristic color, flavor and aromas.

This Spanish chorizo manufacturing process is carried out in facilities where all the phases are controlled: preparation, maturing, drying and labeling, as well as the quality and treatment of the raw materials.
