is one of the most representative products of the meat industry of La Rioja, due, among other things, to the fact that it is a product of great traditionnd that, in spite of presenting a certain heterogeneity due to its artisan production, it has a unique sensory profile and is totally differentiated, both in composition and sensorially, from the rest of the chorizos produced in Spain.
And to prove it, we have launched a challenge, “the challenge riojan chorizo PGI” where several randomly selected people blindfolded tasted the IGP Rioja chorizo against another chorizo of another quality brand.
We have captured the consumer's opinion, and what happened?
That the Chorizo Riojano IGP has been the winner of the challenge because 100% of the consumers have preferred it. Why? Because it has a soft and appealing smell, a pleasant and balanced flavor, it is very easy to chew, and in the mouth it is very juicy and succulent, very differentiated sensory qualities, since the Protected Geographical Indication (PGI) is a Protected Geographical Indication (PGI).
Chorizo Riojano manufactures the product according to strict quality controls, which gives it that flavor so linked to the land, to the traditional good work and to the flavors of the origin.
