CHARACTERISTICS

The chorizo covered by the Protected Geographical Indication “Chorizo Riojano” is characterized by its string or horseshoe shape, with a caliber of 30-40 mm. and a minimum weight of 200 grams. Firm and compact consistency, generally of rough appearance, smooth cut, well bound and in which a clear differentiation between meat and fat can be appreciated, define our product.

Aroma

Balanced and intense aroma, persistent, with dominance of paprika, in addition to notes of garlic; absence of rancid and acrid odors

Texture

Balanced texture with good chewiness in the mouth where its high juiciness can be appreciated. Generally rough in appearance, smooth and well-tied cut, without abnormal coloration and with a clear differentiation between fragments of meat and bacon.

Processing

The different production processes: mincing, kneading, stuffing and drying are carried out following strict controls in facilities audited by the PGI Board itself.

Rioja chorizo is characterized by its intense and penetrating flavor; a delight for the palate. Chorizo whets the appetite, entertains those waiting and gives rise to countless conversations.
